My name is Oliver.
I was raised by my grandmother on a farm in rural Jamaica, where I learned the values of hard work, discipline, and a deep respect for food. From an early age, I dreamed of traveling the world and creating my own restaurant concept. That dream led me to study culinary arts and begin a career in hospitality.
After gaining experience in Jamaica’s five-star resorts, I moved to the U.S. on an H2B visa. There, I worked at high-profile events—luxury weddings, televised galas, and corporate functions—eventually becoming a Banquet Captain. I later moved to the UK, joining Gordon Ramsay’s Boxwood Café as a Chef de Rang and managing large teams in various leadership roles.
My career has taken me from managing complex operations in Jamaica to leading service at some of the UK’s most iconic venues, including The Witchery and Prestonfield House. I’m now a Restaurant Manager at the historic The Witchery in Edinburgh, while also raising a young family and continuing to grow professionally.
With nearly 20 years in hospitality, I'm returning to my first dream: opening my own restaurant. Through my upcoming podcast, I aim to share my experience, inspire others in the industry, and raise the capital to bring this vision to life.
